Between Winter and busy weekends, this make ahead breakfast casserole of maple syrup, sausage, and egg is the delicious, quick breakfast you need to feed a hungry family. This is a great recipe to make ahead and freeze if you’re gearing up for a baby too!
This recipe is adapted from my mother-in-law. The first time I met her was not too long after I had met Travis. Living in Maine, we traveled to Connecticut to spend the fourth of July long weekend there. The whole story is pretty funny, but I’ll keep it short for the purpose of this blog and talking about the deliciousness she made.
I’ve never been a huge fan of egg casseroles, quiches, or anything like that – just being honest. But during the long weekend that we were there, Travis’s mother made breakfast every morning. Pancakes, bacon… you name it. She definitely has a special touch when it comes to breakfast. She raised two strapping young men on her own – breakfast had to be good for those hungry bellies. I totally understand this now that I have multiple boys of my own. Breakfast was a feast! This casserole that she would make both fed a crowd and was filling in itself.
This was the first time I had a breakfast casserole that made me want seconds. It could have been the hint of maple syrup or the crazy amounts of cheese… either way it was delicious. Now that I think of it, it could have been the bread. You put bread into anything and I just melt. Love me some carbs. That’s why I could never fully commit to Keto or Atkins. It’s been years now that Travis and I have been married and since the first time I’ve had this casserole. I’ve made some adjustments over the years to it just to add some variation. It’s one of my go-to recipes when I need something cheap, quick, and easy to bring to church on Sunday morning. I’ve never heard one complaint.
